This is a lighter, healthier sauce, so don't expect it to be as rich as highly caloric white sauces made with cream. It's still very good, though. I used smoked mozzorella and added 1/2 tsp of turmeric and paprika for color and a very subtle flavor boost. You don't need it, but it's something I also do.
