Hash browns are not a thing here in Africa so I had to be a bit inventive and make them myself. Fortunately they turned out ok! Other than that little problem the dish was super easy to put together. I did add some crumbled crispy bacon and a little crushed fresh garlic. We ate every last crumb so it is definitely a winner!

Cheese, onions, and potatoes are the basis for many a good side dish/casserole and this is no exception. I love the liberal use of butter, which really makes this quite decadent tasting. I like the idea of the cornflakes to give a crunch to each serving, though I've used breadcrumbs as toppings on similar casseroles in the past. I'll have to try the cornflakes next time.
