Ingredients

  • 1 pound lean ground beef
  • 1/3 cup cracker crumbs
  • 1 onion, finely chopped
  • 1 egg, lightly beaten
  • 1 tablespoon chili powder
  • 3/4 teaspoon salt
  • 4 servings warm instant mashed potatoes
  • 1 can (11-ounces) whole kernel corn, drained
  • 6 green onions, thinly sliced
  • 1/2 cup shredded Cheddar cheese

Instructions

  1. Pre-heat oven to 375 degrees F. Coat an 8-inch square baking dish with non-stick cooking spray.
     
  2. In a large bowl, combine ground beef, cracker crumbs, onion, egg, chili powder, and salt; mix well. Press into the baking dish and bake 25 to 30 minutes, or until juices run clear. Drain off excess liquid.
     
  3. In a medium bowl, combine potatoes, corn, and green onions. Spread over the meatloaf and sprinkle with cheese. Bake 8 to 10 more minutes, or until cheese melts and top begins to brown.

Could you make up a bunch and freeze, if so how long to microwave when taking out of the freezer?

I would like to add green peas chopped green onion to the mashed potatoes
