This would make a good vegetable side dish. When making this, I would use zucchini squash or yellow squash. For a healthier version of this recipe, I would only use two tablespoons of salted butter, and use unsalted butter for the remaining two tablespoons of butter required. I would also use reduced fat cheddar cheese.
