Effortless Tostada Casserole

If you're looking for a quick weeknight meal, this Mexican casserole couldn't be easier. Layers of meat, tomato sauce and refried beans make up the middle of the Effortless Tostada Casserole, and corn chips and cheese top it off. As much as we love the flavors in this hearty casserole, our wallets love its inexpensive ingredients even more. This tostada casserole is sure to be a hit, and it may just become your new go-to easy dinner meal.

Ingredients

  • 1 pound ground beef
  • 1 envelope taco seasoning
  • 1 (15-ounce) can refried beans
  • 1 (15-ounce) can tomato sauce
  • 2 1/2 cups corn chips
  • 1 cup cheddar cheese

Instructions

  1. Preheat oven to 375 degrees F.
     
  2. In a skillet brown the meat. Add 1 1/2 cups of tomato sauce and seasoning mix. Stir well.
     
  3. Line bottom of 11 1/2 x 7 1/2 x 1 1/2 inch baking dish with 2 cups of chips. Crush remaining chips and set aside. Spoon meat mixture over corn chips in baking dish.
     
  4. Combine the remaining tomato sauce and the refried beans. Spread over meat mixture.
     
  5. Bake for 25 minutes. Sprinkle with shredded cheese and crushed corn chips. Melt cheese in oven.

This casserole sounds a lot like frito pie. I think of this dish as more of an appetizer or snack. It would be great served at a game night, casual get together, or party. When making this, I would use lean ground beef and drain it after cooking it, before adding other ingredients. I would also use low fat cheddar cheese.

This is so god as written, but if you feel it is too bland tasting for you...you can add several things to pice it up, such as chopped jalapenos, some chopped green chilies , or just add crushed red pepper , or even hot sauce. Wonderful just written as is!
