Entertaining Eggplant Casserole
If you have to come up with easy casserole recipes for dinner on the fly, say for a last minute party; this Entertaining Eggplant Casserole is a wonderful idea! It makes an absolutely delicious side dish or main dish for any of your vegetarian friend

Ingredients
- 3 tablespoons oil
- 1 large onion, chopped
- 1 medium eggplant, peeled and cubed
- 1/4 cup green pepper, diced
- 11 ounces tomato and mushroom sauce
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 large tomatoes, diced
- 1 1/2 cup matzo farfel or egg barley
Instructions
- Preheat oven to 350 degrees F.
- Saute onions in oil til tender. Combine onions, eggplant, green pepper, tomato mushroom sauce and seasoning.
- Cook, covered, for 15 minutes or til eggplant is tender. Stir in tomatoes.
- In a 2 quart baking dish, arrange in alternate layers the vegetables and matzo farfel (egg barley).
- Begin and end with the vegetables. Bake (uncovered) for 25 minutes.

This is a really great recipe for vegetarians and general vegetable-lovers like myself. I'm not familiar with egg barley so I hope regular barley will work as well in this recipe. It's nice to use eggplant in new ways because it's so nutritious and it doesn't take long to cook.
