Entertaining Eggplant Casserole

If you have to come up with easy casserole recipes for dinner on the fly, say for a last minute party; this Entertaining Eggplant Casserole is a wonderful idea! It makes an absolutely delicious side dish or main dish for any of your vegetarian friend

Ingredients

  • 3 tablespoons oil
  • 1 large onion, chopped
  • 1 medium eggplant, peeled and cubed
  • 1/4 cup green pepper, diced
  • 11 ounces tomato and mushroom sauce
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 large tomatoes, diced
  • 1 1/2 cup matzo farfel or egg barley

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. Saute onions in oil til tender. Combine onions, eggplant, green pepper, tomato mushroom sauce and seasoning.
     
  3. Cook, covered, for 15 minutes or til eggplant is tender. Stir in tomatoes.
     
  4. In a 2 quart baking dish, arrange in alternate layers the vegetables and matzo farfel (egg barley).
     
  5. Begin and end with the vegetables. Bake (uncovered) for 25 minutes.

This is a really great recipe for vegetarians and general vegetable-lovers like myself. I'm not familiar with egg barley so I hope regular barley will work as well in this recipe. It's nice to use eggplant in new ways because it's so nutritious and it doesn't take long to cook.
