Notes

This casserole can also be prepared ahead of time and refrigerated. To cook, cover it with foil and bake it at 350° F for 40 to 45 minutes, or until heated. Uncover; top with cheese, bacon and green onions; bake for an additional 3 minutes or until cheese is melted.

This is a great recipe for a potluck. I particularly like the fact that it's loaded with bacon and cheddar, two things I always add to my baked potato. It's got pretty much everything that one would normally include on a baked potato and should be a real hit with anyone partaking of it. I'm definitely filing this away for use the next time I attend a potluck.

Great recipe for a potluck or as a side dish for a large party! For vegetarians, skip the bacon bits and add some yummy veggies like broccoli. This is a good mix and match recipe for flavors like feta and spinach instead of the bacon and cheddar.
