Hubby's Favorite Hobo Casserole is a delightfully tasty and budget-friendly recipe that will please your Hubby when he's in charge of making dinner. This easy dinner recipe is easily thrown together on a whim without breaking the bank. This dinner casserole recipe takes only 25 minutes to bake and is sure to have you family running to the table. Egg noodles, tomato sauce, ground turkey, basil and onion combine with cream cheese, sour cream and shredded Cheddar cheese for a dish similar to lasagna with all that Italian flavor you love. Ingredients
- 12 ounces medium egg noodles
- 1 pound ground turkey
- 1 cup chopped onion
- 1 tablespoon finely minced garlic
- 1/4 teaspoon salt and fresh ground pepper
- 16 ounces tomato sauce
- 3 tablespoons fresh chopped basil
- 1 cup fat-free sour cream, divided
- 3/4 cup low fat cream cheese at room temperature
- 1 cup shredded 2% fat cheddar cheese

Preheat oven to 350 degrees F and spray a 9 x 13-inch bake dish.

Cook noodles in a large pot of salted water until just tender, about 7 minutes or as package directs. Drain and set aside.

Meanwhile, in a large skillet over medium high heat, brown turkey for 5 minutes. Drain off any juices, add the onion and garlic to the turkey in the pan and continue to cook over medium high heat for 2 more minutes until lightly browned. Add tomato sauce and basil to the pan, and stir over heat for another 2 minutes.

In a small bowl, stir cup of sour cream with the cream cheese until very smooth and well mixed.

Make layers in the baking dish: half the noodles, half the cream mixture and half the meat mixture. Repeat. Top with the cheddar cheese and bake for about 25 minutes. Serve garnished with the remaining sour cream and fresh basil leaves.

Using low fat ingredients allows this casserole to be delicious, yet more healthful than a standard lasagna.

This casserole is made with Italian flavors. To give it a Tex-Mex spin instead, add ½ teaspoon ground cumin when browning the turkey, use 3 tablespoons chopped cilantro instead of basil and add 2 tablespoons salsa when adding the tomato sauce.

This is good stuff! It's got an Italian flair to it with the tang of sour cream and cream cheese to give it a different flavor. The fresh basil added at the end is a really nice touch. I love using fresh basil. It is so much better than dried. I also like using ground turkey instead of beef. It is a bit lighter.
