What an intriguing recipe. The addition of the olives makes this quite unusual, and I've not used them before in a dish of this sort. I'm a bit indifferent to olives, but my wife loves them, so this will get made before too long. I like the change from noodles to penne pasta and I'm wondering if some other pasta shapes might work as well.

This is my kind of recipe. Pasta dishes are my favorite, and are quick and easy to make. For a healthier version, I would do the following drain the fat off of the cooked ground beef before adding the other ingredients and make some substitutions in the casserole. I would use no salt added tomato sauce, lite cream cheese, lite sour cream, and low-fat cheddar cheese. Another variation could be topping the casserole with low-fat mozzarella cheese.

The sauce is similar to what I make for my traditional lasagna. I love the cream cheese/ sour cream layer. It is different for a pasta dish, but yummy and so creamy. The olives are great. I think mushrooms would be good in it also. If you have never had cheddar in a tomato pasta dish, try this.
