Loaded Red Potato Casserole
Tired of the same old mashed potatoes? Switch it up with this Loaded Red Potato Casserole! Potato casserole dishes have never looked better. Add peppers, cheese, and loads of bacon, and it's a done deal!

Ingredients
- 5 pounds red potatoes, washed, diced, and boiled until tender
- 1 pound bacon
- 1 onion, finely chopped (Vidalia onions are best)
- 1 small red pepper, chopped small
- 2 ribs celery, chopped
- 1 cup sour cream
- 1/4 cup fresh parsley, chopped
- 2 teaspoons salt
- 1 teaspoon white pepper
- 2 cups shredded Monterey Jack/Cheddar blend
Instructions
- Pre-heat oven to 350 degrees F. Boil potatoes.
- In a heavy skillet, cook bacon until medium done. Remove half and continue cooking remaining bacon until crispy. Remove from pan and chop all the bacon.
- Cook all veggies in the bacon fat until the veggies are soft but firm. Mix the sour cream, cheese, and parsley together, and add the cooked veggies to it, bacon fat and all.
- Add cooked bacon, salt, and pepper. Mix this mixture with the cooked, drained potatoes. Put it all into a greased casserole dish. Cover and cook for about 45 minutes.

This potato casserole changes things up a bit since it uses red potatoes. Most people really enjoy eating potato dishes so this should be popular with everyone. For this recipe, I would use lite sour cream and reduced fat cheese.
