    This recipe for Parsley Potato Casserole makes a tasteful addition to any dinner menu. Simple yet flavorful, it's a classic go-to side dish that never fails. Mashed potato casseroles don't get any better than this.

    Ingredients

    • 2 pounds potatoes
    • 1/2 cup sour cream
    • 1/4 cup milk
    • 2 ounces butter
    • 2 tablespoons parsley, finely chopped
    • 1 ounce butter (extra)
    • paprika, to taste

    Instructions

    1. Pre-heat oven to 350 degrees F.
       
    2. Peel potatoes; cook in boiling salted water until potatoes are tender. Drain and mash well.
       
    3. Beat in sour cream, milk, butter, and parsley.
       
    4. Spoon potato mixture into ovenproof serving dish. Rough up top with a fork. Pour over extra melted butter; sprinkle with paprika.
       
    5. Just before serving, bake 10-15 minutes or until heated through.

    This would make a good side dish for a dinner at home or at a potluck. Who can resist simply delicious, creamy mashed potatoes? Everyone will enjoy eating this. For a lighter version of this recipe, I would use lite sour cream and skim milk.
