Anything with egg noodles is sure to be good! They're such a quality choice to add some bulk to a meal, and they soak up flavors beautifully.

We've made this dish quite a few times, only without the pimentos. Instead, we've used diced green and red pepper, plus (on occasion) some diced chilis from our garden. We like the Ragu Alfredo sauce and always keep several jars on hand for quick meals. My wife likes pimentos, and we may give this version a try in the future. We'll also usually add some minced garlic and onion to the beef when we're browning the meat.

This is another one that sounds like a comforting weeknight meal. Interesting choice of ingredients, especially with the pimentos. I'll have to give it a go.

I can't help but think of a homemade version of Hamburger Helper when I see this recipe...and when you put a creamy Alfredo sauce with pimentos and ground beef all together it's gonna be a great night. Maybe instead of baking the sauce into the noodles, you can toss it into some angel hair or linguine pasta and serve it up with your favorite rolls. Or...how about an appetizer using the sauce as a hearty dip and some toasty Crostinis. Oh my gosh I'm drooling!

This would make a great dinner for weeknights when there is limited time to cook. I would use lean ground beef in this recipe. The egg noodles should be drained while they are still underdone so that they will have a good consistency in the casserole because they will continue to cook in the oven.

We did not include the pimentos (just because I really do not like them at all) and my man added some chopped chili fresh from the garden but, other than that, no other changes were made. The finished dish was extremely tasty, the pasta was perfectly cooked and all the flavors had melded beautifully.
