Ingredients
- 2 (10-ounce) packages frozen chopped spinach
- 2 cups chopped onion
- 2 (10 1/2-ounce) cans cream of mushroom condensed soup
- 1 cup grated Cheddar cheese
- 2 cups herb-seasoned classic stuffing mix
- 2/3 cup butter, melted

Preheat oven to 350 degrees F. Grease a 2-quart baking dish and set aside.

Thaw spinach in microwave. Drain spinach to remove all of the excess liquid. I like to put the thawed spinach in a mesh strainer or colander and press it with the back of a large spoon until all of the liquid is removed.

In a large bowl, stir together drained spinach, onions, soup, and cheese.

Place spinach mixture in prepared baking dish.

In a separate bowl, stir together stuffing mix and melted butter. Sprinkle crumbs over spinach mixture.

Bake, uncovered, for 35 to 40 minutes or until bubbly and browned on top.
