Special Spinach and Rice Casserole

Ingredients
- 4 cups cooked white or brown rice
- 2 pounds raw, chopped spinach
- 1 cup chopped ohnion
- 2 cloves minced garlic
- 1 cup mushrooms, sliced
- 3 tablespoons butter
- 4 beaten eggs
- 1 cup milk
- 1 1/2 cup grated cheddar or Monterey jack cheese
- 1/4 cup chopped parsley
- 2 tablespoons tamari sauce
- 1/2 teaspoon salt, or to taste
- a few dashes each nutmeg and cayenne (optional)
- 1/4 teaspoon pepper, or to taste
- paprika to taste
Instructions
- Preheat oven to 350 degrees F.
- Saute onion, mushrooms and garlic with salt in butter.
- When onions and mushrooms are soft, add spinach. Cook approximately 2 minutes.
- Combine with all ingredients in a separate bowl, except paprika.
- Spread into buttered casserole and sprinkle paprika on top.
- Bake uncovered 35 minutes until casserole is firm and lightly browned on top.

I had to look up "tamari sauce" - a close substitute is soy sauce. Why didn't the recipe just say soy sauce?
