Ingredients

  • 2 Chorizo Sausages, uncased and cooked
  • 4 cups prepared rice
  • 1/2 cup diced red onion
  • 1 teaspoon minced garlic
  • 1 large carrot, diced
  • 2 teaspoons oil
  • 1 cup cheddar cheese, grated
  • 1/2 cup jack cheese for topping
  • 1 cup sour cream
  • 1 cup chicken broth
  • Salt and pepper

Instructions

  1. Preheat oven to 350 degrees F.

  2. In a saute pan, heat oil and add onion, carrots and minced garlic. Saute for 5 minutes.

  3. In a large bowl combined cooked sausage, rice, cheese, sour cream, chicken broth, salt and pepper and sautéed vegetables.

  4. Mix well and add to a 9X13 baking dish.

  5. Bake for 20 minutes or until casserole is bubbly at edges.

This is a good change from eating tacos and Spanish rice. Less preparation and the flavor of tacos and Spanish rice in one casserole! To make this healthier, I would drain the sausage after cooking it, use lite sour cream, and reduced sodium chicken broth.
