This recipe is amazing. I was a little leery about using mayo in a casserole, but this recipe took away all my doubt. It was a hit. It was delicious. I am already planning to have this again. Be warned, because as other reviewers said, there will be no leftovers. It was gone in no time, and everyone was looking for more. I made this last week, and my kids keep asking when we are having this again. This became an instant favorite in our house.

This Twice Baked Potato Casserole was such a great side dish for the barbecue we had for some friends and family over the weekend. I love the addition of the bacon (always a winner with me!), green onions and sour cream which bring lovely flavors to this dish. Warning make a large dish of this casserole because everyone will want seconds and, perhaps, even thirds!

I eat mashed potatoes all the time, but I want to switch things up. This looks like my new-favorite recipe!

This is a great way to use twice baked potatoes. It does take some time to bake the potatoes, but it's really an easy recipe. Thanks for the great idea. I'll be making this soon.
