Nostalgic PBJ Cheesecake Bites
Take a trip down memory lane with me and these bites! They are super simple to make, crazy light and fluffy and make you feel like a kid again. The peanut butter and raspberry jam are elevated to a whole new flavor level when added to cheesecake, not to mention added on top of the slightly spiced crumble bottom, supplying a much-needed spice kick to this classic combo. Creamier and sweeter than you ever imagined, these are something you can actually enjoy with your kids, and that’s always a plus!

Ingredients
- Crust
- Olive oil cooking spray
- 1 cup (100 g) almond flour
- 2 tablespoons (16 g) powdered sugar
- 1/2 teaspoon ground cinnamon
- 1/4 cup (57 g) unsalted butter, melted
Filling- 12 ounces cream cheese, at room temperature
- 3/4 cup (90 g) powdered sugar
- 2 large eggs
- 1/4 cup (64 g) peanut butter
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/4 cup (80 g) raspberry jelly

You and your whole family are going to love this recipe! Let’s get started by making the crust: Preheat the oven to 300°F (150°C). Spray a 12-well muffin pan with cooking spray.

In a medium-sized bowl, combine the almond flour, powdered sugar and cinnamon, then add the melted butter and mix until incorporated. Divide equally among the prepared muffin cups. Press the crust down into the bottom of each cup and slightly up the sides until about 1⁄4 inch (6 mm) thick and tightly pressed. Bake for 10 to 15 minutes, or until browned, and then remove from the oven. Let cool in the pan for 10 minutes while you make the filling. Leave the oven on.

To make the filling, place the cream cheese in a large bowl and beat until smooth. Add the powdered sugar, eggs, peanut butter, vanilla and salt and continue to beat briefly until fully combined. Distribute the filling equally among the crusts, then place 1 teaspoon of jelly on top of each portion of filling. Using a toothpick, swirl the jelly around to incorporate and create a swirl pattern on top. This would be a really fun part for the kids to do if you are making this as a family activity!

Return the pan to the oven and bake for 25 minutes, or until set. You can tell because the filling will only slightly jiggle when you move the pan. Once set, remove from the oven and let cool for at least 30 minutes in the pan before removing.
