*Using 2 tablespoons of chili sauce will flavor the dish but not make it spicy. For more “heat” use more chili sauce or substitute your favorite salsa.

Ingredients
- 1 can cream of chicken soup
- 2-4 tablespoons chili sauce (*see note)
- 1 teaspoon dry herb - basil, thyme or cumin
- 2 medium potatoes, thinly sliced
- 1 small bell pepper, thinly sliced
- 2 stalks celery, thinly sliced
- 1 medium onion, thinly sliced
- 1 1/2 pound boneless skinless chicken - thighs or breasts, sliced into -inch slices (or use chicken tenders)
- salt and fresh ground pepper, to taste
Instructions

Preheat oven to 400. Cut four pieces of foil 12x18-inches and coat one side lightly with cooking spray.

In a bowl, combine the soup, chili sauce and herbs.

On each piece of foil, layer potatoes, vegetables and chicken in that order. Sprinkle with salt and pepper, and then spoon over the soup mixture. Fold and seal the foil with the seam on top, and place packets on a baking sheet to bake for 30 minutes.

Packets can also be grilled over medium high heat for about 20 minutes. Use a covered grill, or on an open grill, turn the packets over half way through the cooking time. When chicken is cooked all the way through, carefully open foil packets and enjoy!

I agree that cooking in foil packs in the flavor. I do like to cook in foil because you can cook everything at the same time. It is especially good for potatoes because it cooks them well. I will have to leave the potatoes out of my son's foil packet as he doesn't eat potatoes so this is also another bonus where each pocket can be different.

I love this idea for baking chicken because no one wants to do the dishes when we cook chicken. This chicken recipe sounds so yummy.
