Classic Chicken a la King Recipe
Chicken a la king is a retro dinner recipe that never goes out of style.
Creamy and delicious, Chicken a la King has been a household staple for years. Make Classic Chicken a La King for your family and try comfort food at its finest. Served over, rice, toast or butter noodles, its creamy flavor will have you hooked. Made with deliciously-buttery and flakey puff pastry dough, diced chicken, butter, milk, mushrooms and red pepper, this dish tastes very similar to a chicken pot pie, and is oozing with comforting flavor. Make this dish for a weeknight dinner, or any time you're feeling like you need a little hug from your food. This recipe is sure to hit the spot each and every time!

Ingredients
- 1 sheet frozen puff pastry dough (or 1 package puff pastry individual pastry shells - see note)
- 12 ounces boneless skinless chicken breast (one large or two small)
- 2 cups water
- 1/2 tablespoon salt and pepper, to taste
- 3 tablespoons butter
- 8 ounces button mushrooms, chopped into 3/4-inch pieces
- 1/2 cup chopped red pepper (see note)
- 3 tablespoons flour
- 1 cup milk (whole or 2%)
- 2 tablespoons chopped parsley

Instructions

Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.

Unfold the pastry sheet (if using) and cut into 9 squares or use a 4-inch round cutter to cut into 6 rounds. Place the shapes on the lined bake sheet and bake until golden brown per package directions.

Meanwhile, place chicken breast into a saucepan and cover with the water, adding salt and pepper. Bring to a boil, lower heat and simmer on lowest heat about 20 minutes until meat is nearly cooked through. Drain using a wire sieve over a measuring cup and set broth aside. Cut chicken into ¾ inch cubes.

In a medium skillet over medium heat, melt the butter and sauté mushrooms and pepper until lightly browned and any juices have evaporated. Sprinkle with the flour and continue to cook and stir 2 minutes to cook the flour.

Add milk to the measuring cup with the broth to make 3 cups liquid total. Stir this mixture into the pan with the chicken and continue to stir until thickened, adding parsley and salt and pepper.

To serve, split the puff pastry pieces in half horizontally, and place on serving plate(s). Spoon some of the filling on the bottom and replace the top pieces. Serve immediately.

The peppers give the finished dish nice color; you may use red or green fresh pepper or these can be omitted and instead stir ¼ cup canned pimento into the creamy mixture at the end of cooking.

If using the pastry shells, bake as directed. Cut out the pre-made circle of pastry and use that as the top to serve. These give a cup-shaped container for spooning the filling into and this is the classic way to serve Chicken a la King. However if you would prefer, you may use this filling on top of biscuits, toast, or pasta instead.

This recipe may also be used to make pot pies. Cut the pastry into round shapes slightly larger than bowls or ramekins in which you would like to serve the pot pies and bake as above. Then to serve, spoon filling into individual bowls and top with a pastry round just before serving.

For me Chicken a la King is always a comfort food. It's easy to prepare and since it's a chicken recipe, it's popular among adults and kids. It's actually a family favorite. Haven't done this for a while so I think I'm gonna make one tomorrow.

Chicken a la King is a favorite of ours and this really is a good recipe. Instead of water we used home made chicken stock and added 2 cloves of chopped fresh garlic. We didn't use any pastry because we prefer to eat the low carb way. Served with roast fresh veggies it was a delicious and very filling meal.

I adore chicken a la king but I have never thought of having it with toast, butter noodles or in bread roll for me this is a real twist on a classic dish and I cant wait to try it out for a lunch instead of a dinner. This is really cool.

This Classic Chicken a la King Recipe has made me a Queen to my family. The flavor is simple, down home comfort food, rich and creamy. The recipe is well written, and easy to follow. I made it as written using the puff pastry, it was terrific. I can see making it using white rice instead of the puff pastry for a change also. Any way you make it, this recipe is a winner.

This recipe was super delicious. I commented on this recipe previously but I hadn't made it yet. Since then I did make it and here is the result. I will definitely be making this again. My family loved it and it went very far as well as no-one could eat this much. Mine doesnt look as professional as Annies but it tasted just as good as her looked!

My mom use to make her version of this recipe, and it was actually one of the few things she cooked that I DIDN'T like. Think I will try this and see if I get a better result.

Chicken A la King is one of my favorite reipes but I always used premade puff pastry cups bu they can be hard to find. With puff pastry sheets it will be a favoritea again. Thanks

Chicken Curry in a Hurry- once you do the prep, it cooks fast. My variation is faster and still tasty, though the chicken is not browned.

I never knew Chicken a la king was typically served in pastry bowls. I love that idea. It brings the dish to another level. I can't wait to surprise my family with that. I am a big fan of chicken a la king and I love to get creative so this has given me a lot of ideas. I agree with the peppers giving the final dish a nice color. I also believe that they add in a bit of extra flavor which you can't do without.

Chicken a la King is such a lovely, comforting meal and I just love the idea of serving it between two layers of puff pastry. We used chicken thighs (because that it what was available) and added a clove of fresh garlic, crushed. With a side dish of steamed, fresh garden vegetables it was a delicious meal.

If there's one thing I love, it's chicken-a-la-king. I always use up my roast chicken left-overs for this but of course you can cook it from scratch with chicken breasts. I have never had it with pastry. I always serve mine with rice but this is a nice alternative and certainly looks delicious. It will make a nice change!

Back in the day, I remember having this at school for lunch in the cafeteria and loving every minute of it. I'm not sure why, but I always thought it was so good...that it was too complicated to make. So, I figured you could only find it in restaurants. The things we think as a kid...lol This is definitely going in my recipe box to have on hand anytime I'm feeling nostalgic.
