Copycat Cracker Barrel Broccoli Cheddar Chicken

Copycat Cracker Barrel Broccoli Cheddar Chicken is a deliciously cheesy and crunchy chicken casserole that couldn't be easier to make! This recipe will keep you full long after dinner is over, but you're sure to be dreaming of this recipe for days to come.
Made with onions, broccoli, chicken breast, cheese and Ritz crackers, this is one of the more budget-friendly recipes you're likely to find. If you love the version you've had at Cracker Barrel, why not try making your own at home this week? It's likely you have most of these ingredients at home already anyhow!
You will notice that our version uses Mexican 4-cheese blend, but feel free to substitute Cheddar cheese instead! We love how the 4-cheese blend melts in this recipe, but if you're missing the Cheddar flavor from the original feel free to make the swap.

Ingredients
- 1 pound boneless skinless chicken tenderloins
- 1/2 onion, chopped
- 2 cups frozen or fresh broccoli florets
- 1/2 teaspoon garlic powder
- salt and pepper
- 1 sleeve Ritz crackers, crushed
- 3 tablespoons butter, melted
- 1/2 cup Mexican 4-cheese blend, shredded
- 1 cup prepared cheese sauce

Instructions

Preheat oven to 350 degrees F. Lightly spray or grease the bottom of an 11 x 7-inch baking pan.

Spread onion and half of the broccoli over the bottom of the dish. Top with the chicken tenderloins. Sprinkle evenly with salt, pepper, and garlic powder. Add remaining broccoli.

Dollop cheese sauce evenly over the dish. Top with cracker crumbs and then drizzle with the melted butter.

Bake in the oven until the chicken is cooked through (about 45 minutes), and the cheese is bubbly. Remove from the oven and sprinkle with shredded cheese. Return to the oven to melt shredded cheese, once melted allow to cool slightly before serving immediately.

This looks so good! I've never had this dish at Cracker Barrel before, but it looks yummy.

This is good. I don't normally keep ritz crackers in the house. We don't use them that often. What I like to do is keep crumbs from potato chips or corn chips and use those whenever a crunchy topping is needed. I don't use any butter drizzled on top either. Still very good. I had potato chip crumbs for these.

I don't recall ever having eaten at Cracker Barrel, but I've heard some good things about it and after looking over this recipe I can see why. Chicken and cheese always go so nicely together, I can only imagine what adding the broccoli and some yummy buttery Ritz crackers will do. Come to think of it you can probably add anything to the cheese and chicken to change it up a little if you wanted. Maybe some peppers or salsa for a spicy twist?

We love the combination of chicken and cheese in my house, and this recipe sounds like a perfect one to have on our menu list. It is one of my favorite dishes from Cracker Barrel. I remember taking out of town company there when we had visitors in the summer each year.
