Here in South Africa we are not familiar with El Pollo Loco Chicken but, boy, is it GOOD!! I cut the thighs into smaller pieces to make the most of the marinade (which smelt delicious!) but next time I will try them whole and press them down as suggested. The meal was so delicious that I know we will be having it regularly from now on.
