Gluten Free Tuna Casserole
"This American classic is perfect any time of the year. My Gluten Free Tuna Casserole has all of the flavor, and more, than the original version, but none of the gluten! Ingredients 1 tbsp oil 8 oz gluten free pasta 1/2 medium onion finely chopped 1 stalk celery finely chopped 2 cloves garlic chopped 4 oz mushrooms sliced 4 tbsp butter 1/4 cup all purpose gluten free flour (no gums!) or use cornstarch 2 cups milk 500mls salt and pepper to taste 10 oz canned tuna, drained and flaked 1/2 cup frozen peas 1/2 cup corn TOPPING 1 cup shredded Cheddar cheese 1 cup Gluten Free Cheddar Cheese Crackers, crushed"

I'm always looking for gluten free recipes. This tuna bake is such an awesome one. I like the topping. I'm not sure how I feel about tuna in a casserole, I typically eat in salad or on sushi and therefore it's cold. I do like tuna so I may try this, otherwise I will use chicken in this dish instead.

A visiting friend is gluten intolerant so we had this dish for dinner last night. The only change I made was to leave out the celery (do not like the taste at all) but otherwise followed the recipe exactly. It was tasty, filling and everyone in the family enjoyed it enough to all have seconds.
