Instant Pot Coq au Vin Blanc
"Coq au Vin translates to “rooster with wine.” Typically red wine is used, but I’ve traded it out for a dry white wine. And no rooster here. I’m using boneless skinless chicken thighs. We'll also be using an Instant Pot for this recipe (but slow cooker instructions are also provided) because it's a multi-cooker (and not just a pressure cooker) which means we can sauté and pressure cook this recipe in one pot which also means less dishes (yay!). Coq au Vin Blanc in the Instant Pot gives us tender-fall-off-the-fork chicken in an extremely tasty white wine gravy-ish sauce. Serve it over smashed baby red potatoes, regular mashed potatoes, polenta, or pasta."
