Lithuanian Chicken Roulade
"We cook a fragrant zrazy for lunch – a dish of Lithuanian cuisine, which is a cutlet or a meatloaf with stuffing inside. Traditionally, zrazy are made from beef, but you can also use pork, chicken, turkey or minced meat from different types of meat. The filling can be varied: chicken liver with vegetables, mushrooms with onions and hard cheese, greens with cottage cheese, mashed potatoes, rice with boiled eggs. Today I suggest you to cook zrazys from chicken forcemeat with a stuffing of boiled eggs, fried green onions and fresh dill. The meat is very juicy and tasty, with a ruddy crispy crust. So nourishing zrazy will be an excellent alternative to cutlets or meatballs.
