If you have odds and ends burger or hot dog buns lying around (I always seem to) put them to good use by toasting them up during the last couple of minutes while these are in the oven and make a crispy chicken sandwich! You can also warm up a little honey to dip these in. Yum!

I love the taste of chicken breaded in cornmeal. I grew up with my mom just dredging chicken in flour and that was it. This is better with the cornmeal and flour added. If you do have leftovers, heat them up in the oven if you can to crisp back up.
