Chicken enchiladas with homemade salsa verde. The salsa can be shop-bought, of course, but if you get some green tomatoes or tomatillos you can try from scratch - the salsa sure is tasty! It's also a great dish to use leftover chicken or turkey, you don't need to roast it from scratch. Wish I’d had some authentic crema and some quesa asadero, not easy to get hold of them in Europe! But you know how good a dish is if it still tastes wonderful with several swapped ingredients.
