    Mr. McGreggor's Vegetable Chili

    Peter Rabbit knows that Mr. McGreggor has all the best veggies in his garden, so it should be no surprise that Mr. McGreggor's Vegetable Chili would be satisfying and delicious. This vegetarian chili recipe will be loved by eaters of all kinds!

    Ingredients

    • 1/4 cup olive oil
    • 1 1/2 cup celery, minced
    • 1 1/2 cup carrot, thinly sliced
    • 1 1/2 cup zucchini, diced
    • 1 cup onion, chopped
    • 1 cup fresh mushrooms, sliced
    • 1 red bell pepper, chopped
    • 1 green bell pepper, chopped
    • 2 garlic cloves, minced
    • 2 cans (about 28 ounces) Italian tomatoes, chopped
    • 2 tablespoons chili powder
    • 1 tablespoon dried basil
    • 1 tablespoon dried oregano
    • 1 teaspoon salt
    • 1 teaspoon pepper
    • 1/2 cup chopped parsley
    • 1/2 cup chopped fresh dill
    • 2 cans (about 19 ounces) beans of your choice
    • chopped green onion
    • shredded cheese
    • white rice, cooked

    Instructions

    1. Place olive oil, celery, carrot, zucchini, onion, mushrooms, red bell pepper, green bell pepper, garlic, tomatoes, chili powder, basil, oregano, salt, and pepper in a 6-quart slow cooker.  Cook on high for about 3 hours, or until  vegetables have almost reached the desired tenderness.
       
    2. Add parsley, dill, and beans and cook for one more hour.
       
    3. Serve with green onion, cheese and rice.
