New Mexico Green Chile Stew
Ingredients
- 20 fresh roasted green chiles, diced
- 1 lb. ground beef
- 1 red onion, diced
- 6 red potatoes, cubed
- 15 cups water
- 4 Tbsp Spike (spice mixture)
- 2 teaspoons garlic
- 1/2 cup rice (opt)
- 1/2 cup carrots (opt)
- Salt to taste
Instructions
Brown ground beef. Put all ingredients in a large pot. Bring to a boil for 15 minutes and then a slow boil for 1 1/2 hours. Serve with tortillas and plenty of your favorite beverage to cool down the fire.
