Smokehouse Chili
Ingredients
- 2 1/2 ounces ground beef
- 15 ounces spanish onions
- 2 ounces celery
- 2 ounces green peppers
- 6 ounces kidney beans
- 6 ounces diced tomatoes
- 3 ounces tomato puree
- 6 ounces tomato juice
- 2 1/2 ounces diced sweet red peppers
- 3/4 ounce chili powder
- 1/8 ounce fresh garlic
- 3/4 ounce bbq sauce
- 1/4 ounce soy sauce
- 1/4 ounce cumin
- 1/4 season salt
- 1/4 brown sugar
- 1/2 ounce granulated sugar
- 1/2 ounce celery salt
- 1/2 ounce granulated garlic
- 1/2 ounce kosher salt
- 1/2 ounce worcestershire sauce
- 1/8 ounce black pepper
- 1/8 ounce tobasco
- 1/8 ounce bacon fat
- 1/2 bay leaf
Instructions
Yield: 3/4 gallon. Preheat saucepan and add bacon fat, onions, garlic and meat. Saute until meat is brown and onions tender. nDrain excess fat using a colander. Place all other ingredients in pan w/meat mixture. Bring to a bil and simmer until thick.
