"Italian Cranberry Almond Biscotti, a delicious crunchy Italian Cookie, filled with dried cranberries, Almonds and White Chocolate Chips. A yummy addition to your Christmas Cookie Plate.. Italian biscotti are so easy to make and of course twice baked and at a lower heat. I usually make mine with butter, which makes them a little softer. But if you like your typical almost-broke-that-tooth Biscotti then a light Olive oil is best. Hope you enjoy them! Happy Baking."

I love having baked goodies like biscotti or scones on hand or when guests show up and have a cup of coffee. But when you get them at your local pastry shoppe or grocery store bakery they are so expensive. I love that they are not too sweet, and they have a nice sturdy texture - great for dipping in coffee or milk! The combination of cranberries and almonds works very nicely in these - kind of like a grown up peanut butter and jelly flavor.
