    Marshmallow Biscuits

    Ingredients

    • 4 ounces butter
    • 2 eggs
    • 1 cup sugar
    • 2 cups flour
    • 1 tsp cream of tartar
    • 1/2 tsp baking soda

    Instructions

    Beat butter and sugar to a cream. Mix in flour, cream of tartar and soda and drop in the eggs. Mix. Roll out thinly and cut with cookie cutter. Bake until pale brown in mod. oven. MARSHMALLOW TOPPING 1 oz gelatine 2 cups water 2 cups sugar Put gelatine in 1 cup cold water and stand 10 mins. then add the rest of the water and sugar. Boil gently for 1/2 hour. After boiling set aside to cool. When cold beat until mixture becomes like a snowball. Place some on each biscuit then ice with chocolate icing or sprinkle with coconut. Makes 50-60 biscuits. Note: Work quickly when topping with the marshmallow.
