Best-Ever M&M's Drop Cookies
These delicious cake mix drop cookies with M&M's will become a new family favorite.
These delicious M&M's drop cookies are made with cake mix, which means that they are ready almost as soon as you decide you want to make them. The finished cookies are sweet, fluffy, and chewy. They're everything that you would want in a cookie recipe! You can serve these just cool out of the oven with a big glass of ice cold milk. They make an amazing after school snack, and they are equally scrumptious served just after dinner as a treat at the end of a long day.
By the way, what are drop cookies, anyway? Drop cookies are just cookies made by dropping spoonfuls of dough onto a cookie sheet, rather than rolling out the dough and cutting it with a cookie cutter. Lots of classic cookie recipes are actually drop cookies, including chocolate chip cookies! This version, complete with plenty of M&Ms, is definitely one of our favorites, though.

- 1 (18-ounce) package white cake mix
- 1/3 cup vegetable oil
- 2 large eggs
- 1/2 teaspoon vanilla extract
- pinch of salt
- 3/4 cup miniature M&M's baking bits, plus extra for decoration

Preheat the oven to 350°F. Line two baking sheets with parchment paper.

In a stand mixer fitted with the paddle attachment, beat together the cake mix, vegetable oil, eggs, vanilla, and salt until well blended, about 3 minutes. Stir in the M&M’s baking bits.

Using a cookie scoop, shape the dough into 1-inch balls and place on the prepared baking sheets about 2 inches apart. Sprinkle a few more M&M’s baking bits on top to decorate.

Bake for 10 to 12 minutes, or until lightly golden around the edges.

Cool for 3 to 4 minutes, then transfer to a wire rack to cool completely. Serve, or store in an airtight container until ready to serve.
