Melting Moments with An Orange Glaze
Ingredients
- 1 cup unsalted butter, softened
- 2 cups confectioners sugar
- 1 1/4 cup unsifted all-purpose flour
- 3/4 cup cornstarch
- 3 TBS. orange juice
- grated orange peel (optional)
Instructions
In a large mixing bowl with an electric mixer at medium speed, cream butter and 1/2 cup confectioners sugar until light and fluffy. Beat in flour and cornstarch until well mixed. Wrap and refrigerate dough at least 2 hours. Preheat oven to 325. Roll dough into 1" balls. Place on ungreased cookie sheet. Bake 8-10 minutes or until firm but golden. Cool slightly and remove to racks to completely cool. Make glaze: Mix remaining confectioners sugar with the orange juice and drizzle over the cooled cookies. May sprinkle with the orange peel if desired. Let dry on racks. Makes about 3 1/2 dozen cookies. Some of the cookies, I just dipped them in the orange juice then rolled them in granulated sugar and they were very tasty.
