This little no bake peanut butter chocolate oatmeal cookies look a little like turtles. I wonder if the addition of some pecan chips would take this easy recipe up a notch?

Simple and delicious describes this recipe perfectly! Be careful boiling the sugar as it can be very hot and sticky. I have never tried this recipe with crunchy peanut butter but I commonly substitute that for creamy peanut butter in other cookie recipes and it has always turned out completely fine! Almond butter is a little more liquidy so be sure to have it in the fridge before using in this recipe.

Down south we called these Peanut Butter Delight when I was a student in elementary school. The lunch ladies prepared these in bar form and the kids really got excited when they were served. It has been a minute since I've had these. Think I'll make a batch.

What a nice, simple no bake recipe! I can easily see whipping up a batch of these to take to a gathering. Has anyone tried this out with the crunchy style of peanut butter? I'm tempted to get a jar of almond butter and try them out with that. I love chocolate and nuts, anyway, so I can see experimenting with this recipe.
