These little squares of strawberry lemon cheesecake bars are a treat for the eyes. I love cheesecake but hardly ever make it for myself in fear that I will eat the entire thing. This recipe may just be the exception that I need.

I love this recipe because not only is it beautiful to look at but also uses fresh fruit and tastes amazing! Keep in mind that these bars should be chilled for at least one hour after they are done baking. That time is not included in the prep time! Adding a dash of cinnamon to the crust would be a nice extra flavor!

With spring just arriving I think I will get a jump on summer and make these Strawberry Lemon Cheesecake Bars. The preparation time is one thing I like about this dish. Being able to serve 12 is another. My husband and I live near the beach so we get a lot of traffic. Easy dessert to make for company.
