Thin Mint Stuffed Chocolate Chip Cookies

"Girl Scout cookie season is one of the best times of the year. They set up their booths at the local shopping centers with boxes and boxes of goodies and you can’t help but oblige their cute little faces by taking a box (or three) home with you. On top of that, it seems at least one person at every office has a girl scout in their family and you have to order some from them as well. Before you know it, you’ve amassed a stockpile of Girl Scout cookies at home. I have a few boxes of different varieties myself at home and for the most part I’m A-Okay with eating them straight out of the box. However sometimes it’s fun to experi-mint (see what I did there) and that’s how I came to the decision to stuff Thin Mints into a batch of chocolate chip cookies."
