Peanut Butter No Bake Cookies
Mmmmm - peanut butter! These easy, no bake cookies are the peanut butteriest. Perfect for dessert or snacktime, serve them with a nice, tall glass of milk.

Ingredients
- 3 cups old fashioned oatmeal (dry)
- 5 tablespoons peanut butter
- 2 teaspoons vanilla extract
- 2 cups brown sugar
- 1/2 cup milk
- 1 spray (2 seconds) butter-flavored cooking spray (optional)
Instructions
- Line two cookie sheets with plastic wrap.
- Mix oatmeal, peanut butter and vanilla together in a medium bowl and set aside.
- Stir brown sugar, milk and optional cooking spray together in a medium saucepan and cook over medium heat, stirring occasionally.
- Bring mixture to a full boil for one minute.
- Remove from heat and immediately pour it over the oatmeal mixture and stir thoroughly and rapidly.
- Spoon cookie-sized scoops (a heaping tablespoon) onto plastic wrap and let set until firm.

These are really good. I did half of the recipe for my husband and I, but I made the other half as a dog treat. I substituted the sugar with 1/3 cup of molasses, and I used natural peanut butter. I made them really small, so they were pretty much bite sized. My dogs loved them too! Now I have a dessert recipe that is good for us, but good for them too! I will definitely be making these again!

I have had peanut butter with chocolate and plain chocolate, but never plain peanut butter. I' ll have to tell my sister about these. Or, maybe I will just make her some. She loves anything peanut butter. I don't know about the cooking spray added to the pot. If I wanted butter flavor, I might add a tablespoon of butter instead.

What do you think?i never thought of putting them in a pan, bar style, as 16164 does! that would make quick work of these delicious cookies!

Oh my goodness!! These are awesome!!! They won't last long, I'm sure :) Would be great drizzled with chocolate, too. And we will definitely have to try them frozen! Thanks for sharing

THIS IS ALMOST LIKE A STANDBY I USED WHEN MY SON WAS HOME. ONLY I PUT IT IN AN 8 INCH PAN AND FROZE THEM. GREAT ON A HOT DAY. I ALSO SOMETIMES ADDED A BIT OF COCO POWDER.
