Slow Cooker Loaded Baked Potato Soup
"I love slow cookers. They make life in the kitchen so much easier! I also really like collecting them. One of my favorite things to make in the slow cooker is soup! This loaded baked potato soup is so creamy and delicious. It's sure to be a fast favorite in your home, as it is in mine. You will also love that it is super easy to make and low maintenance. Perfect for those busy weeknights!"

Ingredients
- 4 quarts Vegetable or Chicken Stock
- 1 Small Onion, Chopped
- 10 Medium Potatoes, Chopped
- 1 cup Milk
- 12 ounces Shredded Cheese

Add chicken base to 5 quart or larger crock pot

Add potatoes, onion and garlic.

Cover and cook on high for 5 – 6 hours, until potatoes are soft.

Mash potatoes (I use hand masher) until all potatoes are fine pieces.

Add 1 cup milk and 12 oz shredded cheddar cheese.

Stir well. (if you want soup any thicker, slowly add instant mashed potatoes, if you are not careful, you will have loaded mashed potatoes, if that happens, just thin with more milk)
