Lemon Herb Roasted Chicken

Ingredients
- 4 pounds fryer or roasting chicken
- 1/4 cup onions; chopped
- 2 tablespoons margarine or butter
- juice of one lemon
- 1/2 teaspoon salt
- 1 tablespoon fresh parsley or dried parsley flakes
- 1/4 teaspoon leaf thyme
- 1/4 teaspoon paprika
Instructions
- Rinse chicken well and pat dry; remove any excess fat.
- Place onion in the cavity of the chicken and rub the skin with butter or margarine.
- Place chicken in slow cooker, squeeze the juice of the lemon over the chicken and sprinkle with remaining seasonings.
- Cook on low for 6 to 8 hours.

I have done this before and I have an old over used crock pot if you have an older crock pot they have crock pot bags that you can use to put the chicken in side of tie the bag and place it in the crock pot. The natural juices from the chicken will create moisture (you Truly DO NOT need added liquid.) Happy Crock Potting!

Delicious chicken. The only change I'd make is the cooking time. I had a 6 lb chicken and it was way over cooked at 7 hours. The juices from the chicken and herbs made a wonderful gravy with the addition of a bit of cornstarch.

I often make a whole chicken in the slow cooker and it turns out moist and tender every time. Sometimes, I will wrap the chicken in foil, poke holes in the bottom of foil, and place the chicken on top of 3 big, wadded up balls of foil-this way, the chicken isn't swimming in its own grease as much and more of an oven roasted chicken.

In response to ameytwist's question No liquid is not added nor do you need to grease the inside of the crockpot you could if you are concerned but not necessary The idea of this recipe is to simulate roasted chicken which when done in oven uses no liquid and no lid which creates steam thus liquid Of course in slow cooker because of lid steam is created due to combination of moisture in meat and the heat Therefore you will get some liquid in this recipe coming from the chicken itself I know it is rare to slow cook without added moisture but there are a few recipes that do not add it--see Fried Chicken in Slow Cooker Entree category on this site I love the convenience of my slow cooker but do get tired of all my food swimming in so much liquid which is one reason I like this…Read More recipe Hope this helps

Do you put any water or anything in the bottom of the pan? Seems to me the chicken would stick to the pot.

Delicious! This is such a simple and easy way to fix chicken. The meat falls off the bones. It is light and therefore a great main dish to complement with any kind of pasta or potato (even those with heavier sauces). Try adding a couple slices of lemon in the cavity along with the onion.

if concerned about water ending up in the slow cooker put paper toweling across the top of the slow cooker then place the lid....this prevents the steam rising to the top and dripping onto the chicken...saw this on a cooking show.
