    Disguise vegetables in melted cheese and Ritz crackers with this Ritzy Broccoli Souffle. Creamy and delicious, make cheese souffle day a hit in your home!

    Ingredients

    • 2 pounds (about 2 packages) frozen chopped broccoli
    • 1 can cream of celery soup, undiluted
    • 1 cup real mayonnaise
    • 3 tablespoons onion, grated
    • 2 eggs, beaten
    • 1 cup grated cheddar cheese
    • 1 stack Ritz crackers, crushed
    • 1/4 pound (1 stick) butter or margarine, melted

    Instructions

    1. Cook broccoli; drain and cool.
       
    2. Mix soup, mayonnaise, onion, egg, and cheese and add to cooled broccoli.
       
    3. Put in a lightly greased 3 1/2-quart crockery cooker.
       
    4. Mix 1 stack Ritz or buttery crackers with margarine or butter. Put on top.
       
    5. Cook on high for 2 - 3 hours.
