Slow Cooker Corned Beef Hotpot
"Take a trip to Northumberland with this delicious, corned beef hotpot cooked slow in the slow cooker. Loaded with tinned corned beef, baked beans, potatoes, carrots, and onion and then topped with sliced potatoes. Corned beef hotpot is also known as a corned beef hash casserole, a cowboy hotpot recipe or if you are from the north of England you might refer to it as panackelty, pan haggerty or its other spelling or panaculty. I often think of corned beef hotpot as the poor man’s version of a Lancashire hotpot. That is because the beautiful lean lamb is replaced with tinned corned beef."
