    Ingredients

    • 8 zucchini, unpeeled, cut into 1/4 inch slices
    • 1 onion, thinly sliced and seperated into rings
    • 3 tablespoons olive oil
    • 2 cloves garlic, minced
    • 2 teaspoons salt
    • 2 teaspoons dried basil
    • 2 tablespoons dried parsley flakes
    • Dash pepper
    • 1/2 cup grated parmesan cheese
    • 2 ripe tomatoes, quartered

    Instructions

    1. Combine all ingredients except parmesan cheese and tomatoes in slow cooker.  Stir together thoroughly.
       
    2. Cover and cook on low setting for 7 to 10 hours.
       
    3. Before serving, pour into ovenproof casserole. Sprinkle with parmesan cheese and garnish with tomato quarters. Broil until cheese is lightly browned.

    I add a chub of hamburger fried and drained and 1 can of stewed tomatoes to mixture before filling. makes this sooooo much better tasteing and can be a whoe meal and serve with warm rolls or garlic bread. Wonderful!
