Ingredients
- 3 cups flour
- 1 3/4 to 2 cups sugar
- 1/2 cup cocoa
- 1 teaspoon salt
- 2 teaspoons soda
- 2/3 cup oil
- 2 cups water
- 2 tablespoons vinegar
- 2 teaspoons vanilla
- 8 ounces cream cheese
- 1 egg
- 1/3 cup sugar
- 1/4 teaspoon salt
- 6 ounces chocolate chips
Instructions
- Pre-heat oven to 350 degrees F.
- Combine and sift dry ingredients.
- Add oil, water, vinegar, and vanilla. Beat until smooth.
- Fill cupcake papers 2/3 full.
- Beat cream cheese, egg, sugar, and salt until fluffy. Fold in chips.
- Drop 1 heaping teaspoon of filling into each cupcake.
- Bake 25 minutes at 350 degrees F (180 C).
- Frost when cool, if desired.
