This salad is so fresh and light, and the fresh dill really gives it an elegant taste. I like that the cucumbers are peeled, since many store bought cucumbers have a waxy coating and the skin can be a little bit bitter. If you didn't want to peel them, you could use the English variety, which has a thinner skin, fewer seeds, and is less bitter.
