Peanut and Raisin Coleslaw
This Peanut and Raisin Coleslaw recipe is an interesting variation of your average coleslaw recipe. This delicious and creamy coleslaw recipe calls for tahini but can be left out, or substituted with humus if you would prefer.
Notes
- The quantities above are very general. If you like lots of mayonnaise then add more, if you hate tahini, leave it out.
Ingredients
- 1/2 of a large white cabbage, or use 1/4 red cabbage and 1/4 white
- 2 large carrots, grated
- 4 tablespoons salted or unsalted peanuts, according to your taste
- 3 tablespoons seedless, unsulfured raisins
- 6 tablespoons mayonnaise
- 2 tablespoons tahini
Instructions
- Slice the cabbage into very fine strips (about three inches long), and mix with the grated carrot, peanuts and raisins.
- Stir the tahini into the mayonnaise and mix well with the other ingredients so they are covered.
- This is best served fresh, but will keep, covered, in the fridge for a couple of days.
