Banana Beignets
This Banana Beignets recipe combines the sweet and mild flavor of a banana with the delicious fried flavor of a beignet. But, the best part of this banana dessert recipe is actually the topping. This particular recipe not only tells you how to make beignets, but also how to make buttermilk ice cream and white wine vanilla honey to go on top of the beignets. There is a lot going on in this recipe, but the individual components are all pretty easy to make. This irresistible combination of flavors will soon make this recipe one of your favorites.

Ingredients
- Beignet Batter:
- 3 cups all-purpose flour
- 2 tablespoons baking powder
- 1 teaspoon kosher salt
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 cup water
- 1 cup whole milk
- 1 egg, beaten
- 1/2 tablespoon cinnamon
- 1/4 cup honey
- Buttermilk Ice Cream:
- 2 cups whipping cream
- 12 large egg yolks
- 1 cup sugar
- 2 cups cold buttermilk
- White Wine Vanilla Honey
- 3 vanilla beans (Split and scraped. Use the vanilla bean as well.)
- 2 bottles white wine
- 4 cups white sugar
Instructions

Beignet Batter

Mix dry ingredients together, including cinnamon, flour, baking powder, salt, granulated sugar, and brown sugar.

Mix wet ingredients together, including water, milk, eggs, and honey.

Mix dry and wet ingredients together.

Put ingredients in a 1-quart container.

Buttermilk Ice Cream

Bring whipping cream to simmer in heavy medium saucepan.

Whisk egg yolks and sugar in medium bowl to blend.

Gradually whisk hot cream into egg yolk mixture.

Return mixture to saucepan and stir over medium heat until custard thickens slightly, about 6 minutes (do not boil).

Strain into bowl.

Stir in 1 cup cold buttermilk.

Refrigerate custard until cold, about 2 hours.

Process in ice cream maker according to manufacturer's instructions.

Note: Can be prepared up to 5 days ahead. Freeze in covered container.

White Wine Vanilla Honey

Add vanilla beans, white wine, and white sugar in a saucepan and reduce to a syrup (no caramel whatsoever).

Beignet Cooking Instructions

Peel banana and cut in 1/2 from top to bottom. Place in wet batter, coat whole banana in full and fry in a fryer at 325 degrees for about 6 to 8 minutes until it's a nice golden brown.

Remove and let sit on towel for a couple of minutes.

To plate: Put powdered sugar, 1 scoop buttermilk ice cream, 2 beignets (equal to one whole banana) next to the ice cream, generously drizzle with white wine vanilla honey, more powder sugar on beignets (classic look for beignets), and a little whip cream on plate and Bon Apetit!

I was very happy to find that these beignets did not have any banana in them at all because my daughter is allergic to bananas. That wasn't a typo, was it? I am thinking that you could make these breakfast treats without the fruit to let a favorite icing recipe stand out, or you could add a fruit you like to make these taste different than any other beignet recipe.
