Snickerdoodle Apple Cobbler

"I love making different cookies and quick breads but I seem to get in a bit of a rut when it comes to desserts. I tend to make apple crisp, Coca Cola Cake, peach cobbler and a few other favorites over and over again. Last night we had friends over for dinner and I wanted to try something new. Since we are having the most glorious fall that I can remember in Calgary, I wanted to make something with traditional Fall flavors but I wasn’t sure about going the pumpkin route. I’ve found that people either love or hate pumpkin with no in between. I love the idea of apples covered in a sugar cookie crust and it turned out beautifully. This is going to be in my new rotation for sure. Delicious!"
