Lemon Afternoon Delight
Indulge in easy to make dessert recipes like this heavenly Lemon Afternoon Delight. The lemon Jell-O, Cool Whip and cream cheese make a to-die-for combination.
Ingredients
- 1 stick margarine, softened
- 1 cup flour
- 1/4 cup chopped nuts
- 8 ounces cream cheese
- 1 cup confectioners sugar
- 1 cup Cool Whip
- 3 small (3-ounce) packages instant lemon jello
- 3 cups milk
Instructions

Preheat oven 350 degrees F. Mix margarine, flour and nuts and press in 8 x 8 pan.

Bake for 15 minutes or until nice and brown. Cool. Mix cream cheese, icing sugar and cool whip and spread on crust.
- Mix jello and milk till it get nice and thick. Pour on cream cheese layer. Top with Cool Whip and nuts.

I just love lemon desserts. Usually light and always refreshing and this Lemon Afternoon Delight was a perfect treat to serve to the group of friends who came around for coffee this afternoon. It was really quick to make and easy to do too which is alwasys good. And there were compliments aplenty so I will definitely be making this again.

Editors can you change the above ingredient to read Instant lemon Jello PUDDING. I don't think Jello is the right ingredient. Lemon recipes are great Spring/Easter treats and make great potluck dishes for holiday and family get-togethers. It's always nice to have a non-chocolate dessert to offer.

That would be INSTANT LEMON PUDDING (Jell-O Brand). If you can't find it, you can add some lemon extract to instant vanilla pudding. And yes, CHILL for at least 2 hours or overnight. You can also, make this into a pie...pressing the crumb mixture into a pie plate and proceeding as instructed OR save some time and use a premade, prebaked pie crust...graham, cookie...etc. Remember, you can switch it up and use any flavor instant pudding. Example, premade chocolate (Oreo) pie shell, cream cheese mixture and chocolate pudding...... or premade graham pie shell, cream cheese mixture (fold in some mini marshmallows) and chocolate pudding ...S'mores!

It seems to me like it is missing a step. Refrigerate? For how long? Does the pan need to be "prepared" or not? That being said, it does sound good. :)
