Rollups are so fun to make aren't they? I think it surprised me that you put the pumpkin in the filling, but I can't say that I am disappointed. Everyone is using pumpkin in recipes right now because of the holidays, so this idea fits right in with the rest. I like it because it is different enough to catch my attention.

I'm familiar with the apple version of this and they're quite tasty. I'm sure the pumpkin pie version is equally as delightful. We're coming into pumpkin pie season, and this is a great way to get a quick fix without having to make a pie or run out and buy one. (Don't laugh, I've actually done that). I'd either add a bit of whipped cream or some ice cream to them.
