Mississippi Caviar
This easy appetizer recipe is like Texas Caviar, done up Mississippi style. Mississippi Caviar is a delicious recipe full of ingredients that come together to make one tasty dip. With black-eyed peas, green pepper, jalapeno, corn, tomatoes and more, this southern dip is colorful and addictive. It all comes together in a few minutes with a flavorful sauce that's great when piled high on top of tortilla chips, crackers or scoop-style corn chips!

Ingredients
- 2 cans black-eyed peas, drained
- 1 can Mexicorn or whole kernel corn, drained
- 1 can Rotel diced tomatoes, drained
- 1 red bell pepper, cored, seeded and diced
- 2 scallions or green onions, sliced
- 2 jalapeno peppers in vinegar, drained and minced
- For the dressing:
- 1/4 cup olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon Dijon mustard
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon dried thyme
- 1 teaspoon sugar
- 1/4 teaspoon tabasco sauce
- Freshly ground black papper, to taste
Instructions
- Place the beans and vegetables in a large bowl. In a small bowl, combine the dressing ingredients.Toss into the vegetable mixture until well blended.
- Let the salad stand for several hours, stirring occasionally, to develop the flavors. Serve at room temperature with tortilla chips, corn chips or crackers.
